Thanksgiving Recipes

With Thanksgiving clearly in sight I wanted to let you all know what I have planned for the big day.

Nothing.

Haha I have been bookimarking recipes for Thanksgiving/Christmas forever.  So basically I have a ton of bookmarks...and no plans.  I think I might just take it easy on Thanksgiving and let my mom do the planning and I'll just help her out. I also want to use the opportunity to try out other people's recipes instead of inventing my own.  All in all I'm shooting for rest and relaxation over the Thanksgiving break.  I've been pretty busy lately and really just want to eat and sleep! Our Thanksgiving is always calm because it's just my immediate family, only 4 people. But don't worry we still make enough food to feed the entire neighborhood. :)

But here are a few recipes I'm dyyying to try out, so I'm sure a couple of these will get made (or some variation of them)

Thanksgiving Recipes from my Bookmarks:

Main Dish Options (besides turkey + stuffing- that's always on my mom to make!)

Ricotta Stuffed Squash
or
Moroccon Style Stuffed Acorn Squash

Lighter Sides:

Polenta with Mushroom

Cranberry Walnut Spinach Salad

Apple Cinnamon Cranberry Quinoa

Heavier Sides:

Carmelized Onion Mashed Potatoes  (I also want to make "cauliflower mashed potatoes" from my SBD Recipe Book, sounds really interesting!)

Maple Baked Beans

Sweet Potato Casserole  (I want to make this because it has NO marshmallows- those always gross me out and are too sweet, I think, for sweet potatoes)

Sweet 'n' Spicy Walnut Brussel Sprouts

Desserts:

Pumpkin Rice Pudding

Pumpkin Tart With Pecan Crust

My Recipes That I Might Make:

Pumpkin Spice Overnight Oats (For breakfast, to get into the spirit of the holiday!)

Pumpkin Apple Swirl Muffins

Healthy Dairy Free Mashed Potatoes

Wild Rice Soup

Tempeh and Lentil Soup

Ohhh my gosh I am SO excited for my post-Thanksgiving food baby!

Also speaking of the big day do you remember my goal?  To run a 5k in under 24 minutes?  Well, sadly, I don't think I'm going to make the cut.  I have learned to deal with treadmill workouts, but I don't think my workouts have conditioned me well enough to run that fast.  I'll still try! I'm just hoping to make it to the finish line within 25 minutes so I don't embarrass myself!

Alright I'm off to the studio once again.  Can't wait to show off all my ceramic pieces after all this hard work!

What are your plans for Thanksgiving?
